7 c powdered sugar (icing sugar, or until proper consitancy) .
1 tsp salt .
icing .
1/2 tsp cloves .
5 egg whites .
1 c brown sugar .
2/3 c molasses .
2 eggs .
3/4 tsp cream of tartar .
4 c flour .
2 1/2 tsps cinnamon .
1 tbsp ground ginger .
1/2 tsp baking soda .
1/2 tsp vanilla .
1/2 lb unsalted butter .
1/2 tsp nutmeg
Directions
Step #1 For the dough, mix dry ingredients (except sugar) into mixing bowl & whisk to fully mixd.
Step #2 Beat the butter & sugar with mixer, & then beat in eggs on at a time.
Step #3 Mix until until batter is smooth, scraping bowl to get unmixed mixture.
Step #4 Add half of the flour mixture, just until mixd.
Step #5 Add the molasses, scrape bowl again, & then add rest of flour mixture.
Step #6 Just until mixd (over mixing will make cookies tough).
Step #7 Divide dough into four parts.
Step #8 Double wrap dough in surane wrap & refridgerate for two hrs or until firm.
Step #9 Cook in middle of oven.
Step #10 Preheat oven to 350°F.
Step #11 Roll out dough out on floured surface, & cut with floured cookie cutter.
Step #12 Cookies should be slightly under a 1/4 inch thick.
Step #13 Place cut dough on cookie sheet, add lollipop stick in the center of dough & push into dough slightly & then add the same shape on top of other cookie dough shape & lollipop stick.
Step #14 When they cook the will fuse together.
Step #15 Leave room for the cookies to expand when baking.
Step #16 Squish scraps together & re-put in the fridge & reroll when chilled again.
Step #17 Bake cookies for about 8- 10 mins.
Step #18 Cool cookies on pan for a few mins before transfering to wire rack to cool completely.
Step #19 Directions for icing.
Step #20 When cookies are completely cooled.
Step #21 Combine egg whites, cream of tarter & vanilla in large mixing bowl.
Step #22 Beat on medium speed on mixer until frothy.
Step #23 Add half of powdered sugar, mixing well.
Step #24 Add remaining sugar & beat for about 5 to 6 mins at high speed.
Step #25 The mixture should be stiff & can hold a peak.
Step #26 You may have to add more sugar or a little water depending on your consitancy.
