Sweet 'n Sour Stuffed Cabbage Rolls ("golumbke") Recipe

Ingredients
  • 1 tsp pepper .
  • 1/2 c lemon juice .
  • 1 (29 oz) can whole tomatoes .
  • 1 c white onions, sliced & divided .
  • salt & pepper .
  • 2 lbs ground beef (chuck, uncooked) .
  • 4 tbsps cider vinegar .
  • 1 c carrots, sliced .
  • 1/2 c ketchup .
  • 2 tbsps brown sugar .
  • 8 gingersnap cookies, crushed .
  • 4 tsps white sugar, divided .
  • 3 large eggs, beaten .
  • 1 head cabbage .
  • 3/4 c raw long-grain rice, cooked .
  • 1 c celery, sliced .
  • 1 tsp salt

Directions
  • Step #1 Core cabbage & separate leaves (about 18 leaves).
  • Step #2 Blanch cabbage leaves in boiling water to which 2 Tablespoons of vinegar has been added.
  • Step #3 Gently pour this into colander to drain & rinse under cold water.
  • Step #4 Place beef In a large-ish bowl.
  • Step #5 Add cooked rice, 1 tsp of the white sugar, pepper, beaten eggs, 1/2 tsp brown sugar, salt, 1/2 c sliced onion & ketchup.
  • Step #6 Mix to mix.
  • Step #7 Place approximately 1/3 c mixture on each cabbage leaf & roll up,tucking in sides & secure with toothpicks.
  • Step #8 Sprinkle top sliced carrots,remaining onions & celery on bottom of large casserole dish or baking pan.
  • Step #9 Place rolls on top of vegetables in pan.
  • Step #10 Coarsley chop tomatoes & pour in saucepan.
  • Step #11 Add rest of sugar, brown sugar, gingersnaps & lemon juice.
  • Step #12 Heat at slow simmer until sauce is heated through.
  • Step #13 Sauce should have a sweet & sour taste.
  • Step #14 Add more salt & pepper if you wish at this point.
  • Step #15 Pour sauce over cabbage rolls & cover baking pan.
  • Step #16 Bake at 350 degrees Fahrenheit for 2 hrs.

  • Step #18 This dish can be frozen before baking, then thawed & baked when needed.
  • Step #19 You could also divide this recipe & freeze half the rolls & sauce for another meal.
