Pecan Pie Ginger Cheesecake Recipe

Ingredients
  • 1/4 c butter, melted .
  • 1 (15 oz) put in the fridged pie crusts .
  • Topping .
  • 2 tbsps flour .
  • 3/4 c firmly packed brown sugar .
  • 1/4 c finely sliced crystallized ginger .
  • 1 egg .
  • 1 tsp vanilla .
  • Crust & Filling .
  • 2 eggs .
  • 2 c pecan halves or pecan pieces .
  • 6 tbsps sugar .
  • 1/2 tsp vanilla .
  • 8 oz cream cheese, softened

Directions
  • Step #1 Heat oven to 350ºF.
  • Step #2 Prepare pie crust as directed on package for one-crust filled pie using a 9-inch glass pie pan or 9-inch deep dish glass pie pan.
  • Step #3 In a medium bowl, sugar, mix cream cheese, 1/2 tsp vanilla & 1 egg; beat at medium speed until smooth.
  • Step #4 Stir in ginger.
  • Step #5 Spoon & spread into crust.
  • Step #6 In a large bowl, mix flour & butter; mix well.
  • Step #7 Add brown sugar, 1 tsp vanilla & 2 eggs; mix well.
  • Step #8 Stir in pecans.
  • Step #9 Spoon topping carefully over filling.
  • Step #10 Bake for 40-50 mins or until center is set & crust is golden brown.
  • Step #11 Cool 1 hr then put in the fridge for 2 hrs or until thoroughly chilled.
  • Step #12 Store in refrigerator.
