Step #3 Place 1 heaped tsp on each wrapper, brush the edges with water & fold over.
Step #4 Use your fingers to crimp the edges & stand - crimped edge up - on a lined tray.
Step #5 Heat a thin layer of oil in a pan until nearly smoking, touching, then take off heat & arrange gyoza, in a circular pattern.
Step #6 Cook over med heat for 1-2 mins until base is browned, drizzle with 125ml hot water, cover & cook another 3-4 mins - not letting the pan cook dry.
Step #7 Remove from heat, uncover & let this stand for a couple of mins so gyoza come away from pan.
Step #8 Invert them onto a plate & serve topped with shredded spring onion & ginger alonside the dipping sauce.
