Roasted Chicken Recipe

Ingredients
  • 2 sprigs fresh rosemary .
  • 3 tbsps butter .
  • 1 onion .
  • 2 garlic cloves, peeled .
  • 1 lemon .
  • 2 tbsps oil .
  • 1 whole roasting chicken .
  • salt & pepper .
  • poultry seasoning

Directions
  • Step #1 Preheat oven to 325.
  • Step #2 Brush the bottom of an 8X11 glass baking dish with 1 tbsp of the oil.
  • Step #3 Rinse chicken thoroughly, inside & out, then pat dry with a paper towel.
  • Step #4 Rub the chicken with remaining oil, & place this in baking dish, salt & pepper, breast side up.
  • Step #5 Run your fingers underneath the skin, & place 1/2 tbsp of butter on each breast, & under the skin.
  • Step #6 Chop onion into chunks, & slice lemon in half & then each half into fours.
  • Step #7 Stuff half of the onions & lemons, all of the garlic, the remaining butter, & one sprig of rosemary into the cavity.
  • Step #8 Close the opening with the toothpics.
  • Step #9 Tuck the wings back & under the chicken.
  • Step #10 Arrange the remaining onions, lemon, & rosemary in the pan surrounding the chicken.
  • Step #11 Sprinkle top the chicken with the chicken seasoning.
  • Step #12 Bake for 30 mins, per lb.
  • Step #13 Baste every 30 mins.
