Simmering Sunday Lamb Stew Recipe

Ingredients
  • 1 1/2 tbsps dried rosemary, sliced .
  • 3 large sweet potatoes, cut in thick slices .
  • 2 tbsps curry powder .
  • 1 tsp ground pepper .
  • 1/3 c dried currants .
  • 1 tbsp olive oil .
  • 1 c red wine .
  • 1 (28 oz) can tomato puree .
  • 1 (28 oz) can sliced tomatoes, with juice .
  • 1 medium onion, peeled & sliced .
  • 1 lb cooked lamb, sliced .
  • 1 tsp sea salt .
  • 1 tbsp gingerroot, minced .
  • 1 1/2 tbsps garlic, minced

Directions
  • Step #1 Heat olive oil in bottom of dutch oven on med-high heat.
  • Step #2 Add ginger, garlic & cooked lamb & stir until lamb is heated through.
  • Step #3 Add all other ingredients & stir well.
  • Step #4 Cook over medium-low heat for 2 hrs, or until onions & sweet potatoes are soft.
  • Step #5 Taste & adjust herbs & spices according to your preference.
  • Step #6 Serve with crusty bread & a rich Cabernet Sauvignon (grape juice for the kids!).
