Garlic Chicken Kiev Recipe

Ingredients
  • 6 boneless skinless chicken breast halves, about 1 1/2 lbs .
  • 1/2 tsp paprika .
  • 1 tbsp sliced fresh chives .
  • 2 c cornflake cereal, crushed (about 1 c when crushed) .
  • 1/8 tsp garlic powder (I prefer adding very finely minced fresh garlic cloves) .
  • 1/4 c low-fat buttermilk or skim milk .
  • 2 tbsps sliced fresh parsley .
  • 3 tbsps butter, softened

Directions
  • Step #1 Mix butter, chives & garlic powder (or minced garlic); shape into 3x2" rectangle.
  • Step #2 Cover up & freeze about 30 mins or until firm.
  • Step #3 Heat oven to 425°F Spray 9x9x2" square baking pan with cooking spray.
  • Step #4 Flatten each chicken breast half to 1/4" thickness between plastic wrap or waxed paper.
  • Step #5 Cut chives mixture crosswise into 6 pieces.
  • Step #6 Place 1 piece on center of each chicken breast half.
  • Step #7 Fold long sides of chicken over chives mixture; fold up ends & secure with toothpick.
  • Step #8 Mix cereal, parsley & paprika.
  • Step #9 (I also like to add white pepper to this mixture) Dip chicken into buttermilk, then coat lightly & evenly with cereal mixture.
  • Step #10 Place chicken, seam sides down, in prepared pan.
  • Step #11 Bake, uncovered, about 35 mins or until chicken is no longer pink in center.
  • Step #12 Be careful when you cut into the chicken as the butter may squirt unceremoniously over yourself or other guests.
