1 (12 oz) bag frozen mixed vegetables (I used a mix of petite peas, corn, green beans, & baby carrots) .

6 c leftover mashed potatoes, warmed
Directions
Step #1 Preheat oven to 375* F.
Step #2 Press about 2/3 of the potates into the bottom & up the sides of a 2 1/2-3 qt baking dish.
Step #3 Set aside remaining potates.
Step #4 Prepare gravy according to package directions; set aside.
Step #5 Meanwhile, heat olive oil In a large-ish skillet & saute onion & granulated garlic until onion is tender & just beginning to turn golden.
Step #6 Add frozen vegetables & saute until just warmed, about 5-6 mins.
Step #7 Add beef & saute 2-3 mins longer.
Step #8 Add gravy, mix together well, & heat until bubbling.
Step #9 Pour beef mixture into potato shell.
Step #10 Carefully spread remaining potatoes over the top (if very full, you can place the baking dish on a cookie sheet to catch drips if it bubbles over).
Step #11 Bake at 375* F for 25-30 mins or until top is turning golden & filling is hot.
