Olive Garden Stuffed Chicken Marsala Recipe

Ingredients
  • Chicken .
  • salt & pepper, to taste .
  • 1 small onion, sliced .
  • 4 oz cooking oil .
  • 1 (8 oz) shredded mozzarella cheese .
  • 1/4 c parmesan cheese, grated .
  • 24 oz marsala wine .
  • 1/2 tsp salt & pepper .
  • 2 c flour .
  • 1/3 c sour cream .
  • 6 c button mushrooms, thinly sliced .
  • 2 lbs boneless skinless chicken breasts .
  • 2 tbsps sun-dried tomatoes, flakes if in oil drain first .
  • Sauce .
  • 1 tsp fresh garlic, minced .
  • 1/4 tsp crushed red pepper flakes .
  • 1/2 c smoked provolone cheese .
  • 8 oz heavy cream .
  • 1/2 c breadcrumbs .
  • Cheese Stuffing

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Stuffing:Combine all cheese stuffing ingredients in a bowl.
  • Step #3 Chicken:Butterfly thickest section to create two lobes.
  • Step #4 Place lbed chicken breasts on a plate & place desired amount of stuffing on one half of chicken breast.
  • Step #5 Gently press stuffing down & fold over other side of chicken breast.
  • Step #6 Preheat a large sauté pan on stove top.
  • Step #7 Add 4 oz.
  • Step #8 oil; heat oil until shimmering.
  • Step #9 Place approximately 2 c flour in a pan & season it to taste with salt & pepper.
  • Step #10 Dredge chicken in flour & shake off excess flour.
  • Step #11 Place stuffed chicken breasts in sauté pan with the preheated oil.
  • Step #12 Cook each side until golden.
  • Step #13 When chicken is seared on both sides remove them from sauté pan & place them in a baking pan & into the oven for 10-20 mins.
  • Step #14 Bake until juices run clear & stuffing & center reach a temperature of at least 165°.
  • Step #15 Sauce: Add the onions to the sauté pan.
  • Step #16 Stir with spatula.
  • Step #17 After 2 mins add the mushrooms; sauté mixture until onions are translucent.
  • Step #18 Deglaze sauté pan with the marsala wine (make sure to incorporate particles from bottom of pan).
  • Step #19 Bring wine to a simmer & add heavy cream.
  • Step #20 Simmer sauce on low heat until reduced by half.
  • Step #21 Place cooked chicken breast on a plate & top this with onions, mushrooms & sauce.
