Ingredients
  • 1 c granulated sugar .
  • 1/2 c real butter, room temperature .
  • For the Pastry .
  • 2/3 c lard .
  • 1/4 tsp salt .
  • 3-4 tbsps cold water .
  • 2 c all-purpose flour .
  • 2 tsps vanilla .
  • 1 large egg .
  • For the Filling .
  • 1 c dried currants

Directions
  • Step #1 To Make the Filling:.
  • Step #2 Wash the currants & drain them.
  • Step #3 Stir the sugar & butter together well.
  • Step #4 Mix in the egg & vanilla until well mixed.
  • Step #5 Stir in the currants.
  • Step #6 To Make the Pastry:.
  • Step #7 Mix the flour & salt together.
  • Step #8 Cut the lard into the flour & salt until the consistency is like crumbs.
  • Step #9 Gradually add enough of the water to make the dough hold together, & form it into a ball.
  • Step #10 Roll out the dough & cut out with a round cookie cutter & fit into muffin tins (regular size, not mini).
  • Step #11 To Assemble & Bake:.
  • Step #12 Pre-heat oven to 375 degrees Put a large spoonful (about 2 tbsps) of the filling into each unbaked tart shell.
  • Step #13 Bake @ 375 for 15 to 20 mins, until bubbly & golden & crust is done.
  • Step #14 (Don't overbake - the filling should not be too brown or crispy.
  • Step #15 ).
