Step #1 Prepare the noodles as per the packet directs & continue the below steps while softening.
Step #2 Slice the chicken in to strips.
Step #3 In a large fry pan add the oil & fry the chicken until just sealed.
Step #4 Meanwhile mix the soup mix, apricots & nectar together.
Step #5 Add the frozen vegetables & the apricot mixture over the chicken & stir fry for about 5 mins.
Step #6 Drain the noodles & add into the chicken mixture.
Step #7 Cook for a further 2 mins (just to heat through).
Step #8 Serve as soon as possible.
