Olive Oil Cake Recipe

Ingredients
  • 1/2 c extra virgin olive oil .
  • 1/4 c orange marmalade .
  • 1 tsp salt .
  • 2 tbsps grated lemon rind .
  • 3 tbsps fresh lemon juice .
  • 2 tbsps flour .
  • 1/2 tsp baking soda .
  • cooking spray .
  • 1 1/2 c nonfat milk .
  • 2 1/2 c sugar .
  • 1 tsp baking powder .
  • 2 1/4 c flour .
  • 2 tbsps powdered sugar .
  • 3/4 c egg substitute

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Coat a 12-c Bundt pan with cooking spray; dust with 2 tbsps flour.
  • Step #3 Combine granulated sugar, rind, egg substitute, milk, oil, & juice In a large-ish bowl; stir with a whisk until well mixd.
  • Step #4 Combine 2 1/4 c flour, salt, baking powder, & baking soda; stir well with a whisk.
  • Step #5 Add flour mixture to oil mixture, stirring with a whisk until smooth.
  • Step #6 Pour batter into prepared pan.
  • Step #7 Bake for 55 mins or until golden brown & cake begins to pull away from sides of pan.
  • Step #8 Cool cake completely in pan on wire rack.
  • Step #9 Invert cake onto a plate.
  • Step #10 Place the orange marmalade in a microwave-safe bowl.
  • Step #11 Microwave at HIGH 1 min.
  • Step #12 Stir & spoon hot marmalade evenly over cake.
  • Step #13 Cool completely.
  • Step #14 Sift powdered sugar over top of the cake.
