Curried Split Pea Soup With Fresh Corriander (cilantro) Recipe

Ingredients
  • salt & pepper .
  • 3 garlic cloves, minced .
  • 1 tsp ground coriander .
  • 1 green onion, minced .
  • 1/2 tsp crushed red pepper flakes .
  • 1 tsp ground cumin .
  • 2 tsps ground dehydrated onion (powder) .
  • 11 1/2 c water .
  • 3 tsps curry powder .
  • 3 tbsps olive oil .
  • 1/2 c sliced onions .
  • 1 shallot, sliced .
  • 450 g dried split green peas (you can use yellow too, but I find the green peas softer) .
  • 2/3 c of sliced fresh cilantro

Directions
  • Step #1 In a large pot on low heat, warm olive oil with the spices (chili flakes, cumin, curry, corriander, onion powder).
  • Step #2 Stir to form paste.
  • Step #3 DO NOT let the mixture burn! Add onions, shallots, green onion & garlic.
  • Step #4 Mix so that nothing burns.
  • Step #5 This will take maybe five mins.
  • Step #6 Add half of the sliced corriander.
  • Step #7 Rinse split peas in cold water, drain & add to pot.
  • Step #8 Stir as soon as possible.
  • Step #9 Turn heat to high.
  • Step #10 Add the water & stir well.
  • Step #11 Cover up, bring to a boil for 10 mins then turn heat to medium-low for another 50 mins, stirring every few mins.
  • Step #12 Add the rest of the cilantro in the last 15 mins.
  • Step #13 Add salt & pepper to taste.
  • Step #14 Serve or pack away for freezing.
