Heartwarming Beef-barley Soup Recipe

Ingredients
  • 2 c sliced fresh mushrooms .
  • 1 1/2 lbs boneless beef chuck .
  • 1 tsp salt .
  • 1 c sliced carrots .
  • 1 c sliced onions .
  • 2 c sliced celery .
  • 4 c water .
  • 1 garlic clove, minced .
  • 1 c quick-cooking barley (or regular barley, precooked) .
  • 1 tsp dried rosemary, crushed .
  • 1/2 tsp pepper .
  • 1 (6 oz) can tomato paste .
  • 2 c low sodium beef broth

Directions
  • Step #1 Trim fat from meat, cut meat into 1/2-inch cubes.
  • Step #2 In a Dutch oven mix meat, carrots, onion, mushrooms, salt, celery, & garlic & bring to boiling, rosemary, pepper, water, broth, reduce heat.
  • Step #3 Cover up & let simmer 1 to 1-1/4 hrs or until meat is tender, if necessary, skim fat.
  • Step #4 Stir in tomato paste & barley.
  • Step #5 Return to boiling; reduce heat.
  • Step #6 Cover up & let simmer about 10 mintues or until barley is done.
