Creamy Red Pepper Soup Recipe

Ingredients
  • 2 large onions, sliced
  • 1/8 tsp cayenne pepper
  • 4 garlic cloves, minced
  • 1/8 tsp black pepper
  • 5 c chicken broth
  • 2 large potatoes, peeled & sliced
  • 2 (15 oz) cans pears in juice
  • 2 (7 oz) jars roasted red peppers, drained, patted dry & sliced
  • 1/4 c butter or margarine

Directions
  • Step #1 In a Dutch oven, saute onions & garlic in butter until tender.
  • Step #2 Add potatoes, red peppers & broth.
  • Step #3 Bring to a boil.
  • Step #4 Reduce heat; cover & let simmer for 15-20 mins or until vegetables are tender.
  • Step #5 Remove from the heat.
  • Step #6 Add pears; let cool.
  • Step #7 In a mixer, cover & puree in batches.
  • Step #8 Return to the pan.
  • Step #9 Stir in cayenne & black pepper.
  • Step #10 Cook until heated through.
