Rice And Tofu Stuffed Pepper Recipe

Ingredients
  • 1 garlic clove, minced .
  • 1 tbsp olive oil .
  • 1 3/4 c marinara sauce, divided .
  • 1 c cooked brown rice .
  • ground black pepper .
  • 1 (12 oz) package extra firm tofu, cubed .
  • 1 c shredded mozzarella cheese (can use soy cheese) .
  • 2 orange bell peppers, halved & seeded .
  • 8 slices tomatoes .
  • 2 red bell peppers, halved & seeded .
  • salt

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Steam halve peppers for approx 15 mins to soften (we prefer to have them just a little less soft).
  • Step #3 Drain & set aside to cool.
  • Step #4 Heat the olive oil in a skillet over med-heat/flame, & stir in the garlic & tofu.
  • Step #5 Saute 5 mins.
  • Step #6 Mix in 1/4 c marinara sauce, salt & pepper, rice, continue to cook 5 more mins.
  • Step #7 Spread remaining marinara sauce in a 11X7 baking pan.
  • Step #8 Place an equal amount of rice mixture into each pepper half.
  • Step #9 Place 1 tomato slice on each pepper, & top peppers with mozzarella.
  • Step #10 Arrange stuffed peppers in a baking dish.
  • Step #11 Bake 25 mins or until cheese in melted.
