Linguine With Garlic Sauce Recipe

Ingredients
  • 1/2 lb bacon, sliced .
  • 5 c fresh spinach .
  • 1/2 tsp salt .
  • 2 tbsps butter .
  • 1/2 tsp minced garlic .
  • 1 1/4 c milk .
  • 1 lb uncooked linguine .
  • 1/4 tsp pepper .
  • 8 oz cream cheese (light is what I used) .
  • 1/2 c sliced onions .
  • 1/4 tsp ground nutmeg .
  • 1/2 c pine nuts, toasted

Directions
  • Step #1 Cook linguine according to package directions.
  • Step #2 Meanwhile, In a large-ish skillet, cook bacon over med-heat/flame until crisp.
  • Step #3 Using a slotted spoon, remove to paper towels; drain, reserving 1 T.
  • Step #4 drippings.
  • Step #5 In the drippings, sauté the spinach, onion, garlic until tender.
  • Step #6 Add the milk, cream cheese, butter, salt, nutmeg & pepper; stir until smooth.
  • Step #7 Stir in pine nuts & bacon; heat through.
  • Step #8 Drain pasta; toss with sauce.
