Barefoot Contessa's Chocolate White Chocolate Chunk Cookies Recipe

Ingredients
  • 1 c light brown sugar, packed .
  • 1 tsp kosher salt .
  • 1/2 lb unsalted butter, at about room temp .
  • 2/3 c good unsweetened cocoa .
  • 1 c granulated sugar .
  • 1 1/2 lbs good white chocolate, coarsely sliced .
  • 2 extra-large eggs, at about room temp .
  • 2 c flour .
  • 1 tsp baking soda .
  • 2 tsps pure vanilla extract

Directions
  • Step #1 Preheat the oven to 350 degrees F.
  • Step #2 Cream the butter & 2 sugars until light & fluffy in the bowl of an electric mixer fitted with the paddle attachment.
  • Step #3 Add the vanilla, 1 at a time, then the eggs, & mix well.
  • Step #4 Add the cocoa & mix again.
  • Step #5 Sift together the flour, baking soda, & salt & add to the chocolate with the mixer on lowish speed until just mixd.
  • Step #6 Fold in the sliced white chocolate.
  • Step #7 Drop the dough on a baking sheet lined with parchment paper, using a 1 3/4-inch ice cream scoop or a rounded tbsp.
  • Step #8 Dampen your hands & flatten the dough slightly.
  • Step #9 Bake for exactly 15 mins (the cookies will seem underdone).
  • Step #10 Remove from the oven & let cool slightly on the pan, then transfer to a wire rack to cool completely.
