Barefoot Contessa's Sun-dried Tomato Dip (light Version) Recipe

Ingredients
  • 3/4 tsp fresh ground black pepper .
  • 1/2 c light mayonnaise .
  • 10 dashes Tabasco sauce .
  • 8 oz neufchatel cheese, room temperature (1/3 lower fat) .
  • 1 tsp kosher salt .
  • 1/4 c sun-dried tomatoes packed in oil, drained & sliced (8 tomatoes) .
  • 1/2 c light sour cream .
  • 2 scallions, thinly sliced (white & green parts)

Directions
  • Step #1 Puree the tomatoes, sour cream, Tabasco sauce, cream cheese, salt, mayonnaise, & pepper in a food processor/blender fitted with a metal blade.
  • Step #2 Add the scallions & pulse twice.
  • Step #3 Serve at about room temp.
