Sarah's Irish Soda Bread Recipe

Ingredients
  • 1 tbsp baking powder .
  • 1 3/4 c buttermilk .
  • 1 c raisins or currants .
  • 1 tbsp caraway seeds .
  • 4 c all-purpose flour .
  • 1/3 c shortening .
  • 1 tsp baking soda .
  • 1 egg .
  • 1/4 c sugar .
  • 1 tsp salt

Directions
  • Step #1 1.
  • Step #2 Preheat oven to 350 degrees F.
  • Step #3 Grease large baking sheet; set aside.
  • Step #4 2.
  • Step #5 Sift flour, sugar, baking powder, baking soda & salt into large bowl.
  • Step #6 Stir in caraway seeds.
  • Step #7 Cut in shortening with pastry mixer or 2 knives until mixture resembles coarse crumbs.
  • Step #8 Stir in raisins.
  • Step #9 Beat egg in medium bowl using fork.
  • Step #10 Add buttermilk; beat until well mixed.
  • Step #11 Add buttermilk mixture to flour mixture; stir until mixture forms soft dough that clings together & forms a ball.

  • Step #13 Turn out dough onto well-floured surface.
  • Step #14 Knead dough carefully 10 to 12 times.
  • Step #15 Place dough on prepared baking sheet.
  • Step #16 Pat dough into 7-inch round.
  • Step #17 Score top of dough with tip of sharp knife, making an "X" about 4 inches long & 1/4 inch deep.
  • Step #18 4.
  • Step #19 Bake 55 to 60 mins or until toothpick inserted in center comes out clean.
  • Step #20 Immediately remove this from baking sheet; cool on wire rack.
  • Step #21 Bread is best eaten the day it is made.
