2 tbsps fresh coriander or fresh parsley, chopoed .
1 c water .
2 garlic cloves, crushed .
400F g tomatoes with juice, sliced .
3 tbsps tomato paste .
1 tbsp olive oil .
1 tsp ground cumin
Directions
Step #1 Heat the oil In a large-ish saucepan.
Step #2 Add the garlic, cumin, garam masala & chilli powder.
Step #3 Cook over low heat/flame, stirring, for 1 min.
Step #4 Combine the soup mix & the one c of water.
Step #5 Add to the pan with all the remaining ingredients, except the coriander or parsley.
Step #6 Bring to the boil, then simmer over a low heat, stirring, continuing to stir every once in awhile, for 20-25 mins or until the lentils are tender.
Step #7 Mix through the coriander or parsley before serving.
