Chicken Pecan Salad Recipe

Ingredients
  • 1 tbsp Greek seasoning
  • 2/3 c brown sugar
  • 6 skinless, boneless chicken breast halves
  • 1 tbsp olive oil
  • 1/2 c honey mustard salad dressing
  • 1 tbsp lemon juice
  • 1 c cherry tomato halves
  • 1/2 c fresh strawberries
  • 1 lb romaine lettuce, torn
  • 2 tbsps hot red pepper sauce
  • 1 tsp Worcestershire sauce
  •  
  • 1/2 c seedless grapes
  • 1/4 c fresh blueberries
  • 1 pinch salt
  • 1/2 c margarine, melted
  • 1 lb coarsely sliced pecans
  • 1/4 c fresh raspberries

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 In a bowl, margarine, brown sugar, mix the hot red pepper sauce, Worcestershire sauce, lemon juice, & salt.
  • Step #3 Mix pecans into the bowl, tossing to coat evenly.
  • Step #4 Spread pecans in a single layer on a baking sheet.
  • Step #5 Bake 10 mins in the preheated oven, stirring often & watching carefully, until lightly browned.
  • Step #6 Remove from heat, & set aside.
  • Step #7 Rub chicken with the olive oil, place on a baking sheet, & sprinkle with Greek seasoning.
  • Step #8 Bake 20 mins or until juices run clear.
  • Step #9 Slice into strips.
  • Step #10 In a salad bowl, chicken strips, strawberries, cherry tomato halves, grapes, toss together romaine lettuce, raspberries, & blueberries.
  • Step #11 Sprinkle top with pecans, & drizzle with dressing.
