Jalapeno Latkes Recipe

Ingredients
  • 3 large idaho potatoes, peeled .
  • 1 tbsp dry oregano, Mexican preferably .
  • 1/4 c frying oil .
  • 1 tbsp kosher salt, plus extra for serving .
  • 1/2 c matzo meal .
  • 1 egg yolk .
  • 1 jalapeno pepper, sliced

Directions
  • Step #1 Grate potatoes with a box grater or food processor/blender.
  • Step #2 Mix with the yolk, salt, jalapeño, oregano & matzo meal.
  • Step #3 Refrigerate 30 mins.
  • Step #4 Heat oil in a pan to 350 degrees.
  • Step #5 Add a tbsp of potato mixture at a time & fry until golden brown.
  • Step #6 Do not crowd the pan.
  • Step #7 Drain latkes on paper towels; arrange on a platter.
  • Step #8 Sprinkle top with salt & serve warm.
