8 scallions, sliced (plus 1/4 c dark-green 2-inch-long thin strips for garnish) .
2 tsps allspice .
2 tbsps vegetable oil (plus extra for grill) .
1 medium onion, sliced .
1/2 tsp freshly ground nutmeg .
3 garlic cloves, sliced .
3 1/2 lbs chicken parts (thighs & drumsticks) .
1/2 tsp cinnamon
Directions
Step #1 To make sauce/marinade: Place all marinade ingredients, except scallion garnish, in a food processor/blender & puree until almost smooth.
Step #2 Transfer half of puree to a small bowl & keep chilled, covered, for sauce.
Step #3 Place remaining puree In a large-ish heavy-duty resealable plastic bag with chicken & seal, turning to coat well.
Step #4 Marinate, turning bag every once in awhile, at least 8 hrs or overnight, chilled, placing bag In a large-ish bowl to catch any leaks.
Step #5 Preheat grill & lightly oil rack.
Step #6 Let chicken stand in marinade at about room temp 30 mins before grilling.
Step #7 Meanwhile, cut sides & ends off pineapple.
Step #8 Cut crosswise into 15 slices about 1/4 inch thick.
Step #9 Sprinkle top one side of each slice with 1/2 t packed light brown sugar.
Step #10 Place sugared side down on rack & grill, until golden brown, turning once, about 3 mins.
Step #11 Transfer to a platter, alternating slices with scallion garnish.
Step #12 Remove chicken from marinade (discard marinade) & grill over moderate heat, turning every once in awhile, until cooked through 35-45 mins, depending on size.
Step #13 Transfer to platter with pineapple & serve this with remaining sauce on side (excercise caution; sauce is spicy).
