Ingredients
12 oz vanilla wafers .
1/3 c all-purpose flour .
1/2 c butter, melted .
2 large bananas, sliced .
4 egg whites .
4 egg yolks .
1/2 c sugar .
2 large eggs .
2 tsps vanilla extract .
2 c milk .
3/4 c sugar
Directions
Step #1 Reserve 30 vanilla wafers.
Step #2 Coarsely crush the remaining wafers in a food processor/blender; mix with the butter until mixed.
Step #3 Firmly press the crumbs from the bottom of a 9" pie plate all the way to the outer edge of the plate.
Step #4 Bake at 350 degrees for 10-12 mins or until lightly browned.
Step #5 Cool on a wire rack for 30 mins.
Step #6 When completely cool, arrange banana slices in the crust.
Step #7 Vanilla Cream Filling: In a saucepan, flour, egg yolks, mix the 3/4 c sugar, eggs, & milk.
Step #8 Cook over medium low heat, stirring constantly, for 8-10 mins or until it has thickened to the consistency of pudding.
Step #9 Remove from heat & add vanilla.
Step #10 Pour half of the vanilla cream filling over the bananas.
Step #11 Layer 20 vanilla wafers on top of the filling.
Step #12 Pour the remaining filling over the wafers.
Step #13 Meringue: Beat the egg whites on high speed with a mixer until foamy.
Step #14 Add the sugar, 1 T at a time, & beat until stiff peaks form.
Step #15 Spread the meringue evenly over the filling & be sure to seal the edges.
Step #16 Bake at 350 degrees for 10-12 mins or until the meringue is golden brown.
Step #17 Cool on a wire rack for 1 hr or until completely cool.
Step #18 Coarsely crush the remaining 10 wafers & garnish the top of the pie.
Step #19 Chill for 4 hrs before serving.
