Wild Oats Chocolate Raspberry Bread Pudding Recipe

Ingredients
  • 8 eggs .
  • 6 oz white chocolate baking bar, broken into pieces .
  • 1 c half-and-half cream .
  • 10 pieces white bread (day-old baguette, croissants, or sliced bread) .
  • 2 c raspberries .
  • 1 tbsp confectioners' sugar, for dusting .
  • 3 c whole milk .
  • 1 c unsweetened cocoa powder .
  • 1 tbsp vanilla extract .
  • 1 1/3 c raw sugar

Directions
  • Step #1 Preheat oven to 350°F Bring half & half & milk to a simmer over med-heat/flame.
  • Step #2 Stir in cocoa powder, until dissolved.
  • Step #3 Set aside & cool to about room temp.
  • Step #4 In a mixing bowl, whisk together eggs, sugar & vanilla.
  • Step #5 Mix cocoa mixture in to egg mixture.
  • Step #6 Spray a 9 X 13 baking dish with cooking spray.
  • Step #7 Break bread into bite-sized pieces.
  • Step #8 Sprinkle top with 1 1/2 c of raspberries & the white chocolate.
  • Step #9 Pour cocoa mixture over the bread, making sure that each piece is covered.
  • Step #10 Bake for 55 to 60 mins, until just firm.
  • Step #11 Dust with confectioners’ sugar & serve topped with vanilla ice cream & remaining berries.
