Heart-healthy Chicken Tenders Recipe

Ingredients
  • 1 tbsp poultry seasoning, mix (like Mrs. Dash Grilling Spice uping for Chicken) .
  • 32 oz plain nonfat yogurt .
  • 1 (21 oz) box cornflake crumbs .
  • 1/2 c hot sauce (like Frank's Red Hot) .
  • 6 lbs boneless skinless chicken breasts, fresh, not frozen .
  • 1 tbsp onion powder .
  • 1/2 tbsp garlic powder (like McCormick California Style Garlic Powder with Parsley)

Directions
  • Step #1 To Triple-Wash Chicken: Remove chicken breasts from pkg & place this in colander.
  • Step #2 While rinsing chicken in colander with cold water, trim fat from each chicken breast with kitchen scissors.
  • Step #3 Place trimmed breast into separate bowl; do not return to colander! (Reserve trimmings for making chicken broth, if desired.
  • Step #4 ) Once all breasts have been trimmed of fat, wash colander & kitchen scissors.
  • Step #5 Then return breasts to colander & rinse with cold water again.
  • Step #6 While rinsing, use kitchen scissors to cut breasts into strips or chunks (more kid-friendly), placing pieces into separate bowl.
  • Step #7 Do not return to colander! Once all breasts have been cut into pieces, wash colander.
  • Step #8 Return pieces to colander & rinse chicken one more time; drain well.
  • Step #9 Place yogurt, hot sauce, & seasonings into gallon-sized Ziploc Freezer bag.
  • Step #10 Mix well.
  • Step #11 Place chicken pieces into bag & mix well, making sure pieces are covered.
  • Step #12 Refrigerate in the coldest part of fridge at least 4 hrs or overnight.
  • Step #13 The colder the chicken, the better the results.
  • Step #14 Preheat oven to 450 degrees F.
  • Step #15 Line large baking sheet with Reynolds Release Foil.
  • Step #16 Lightly coat foil wrap with canola oil or spray with non-stick cooking spray.
  • Step #17 Place 1/3 box of Corn Flake Crumbs into gallon-sized Ziploc Freezer bag.
  • Step #18 Put approximately 10 chicken pieces into bag & shake to coat.
  • Step #19 Remove pieces from bag & place on baking sheet (about 20-25 pieces/sheet).
  • Step #20 NOTE: After coating 20-25 pieces, discard Corn Flake Crumbs & put another 1/3 box into bag.
  • Step #21 Repeat as necessary.
  • Step #22 Bake 12 mins; do not turn pieces over! Chicken will be golden brown on top.
  • Step #23 Do not overcook or chicken will be tough.
  • Step #24 Serve with your favorite dipping sauces & raw veggies.
  • Step #25 Also great on buns & in wraps topped with your favorite greens, (red &/or green) onion, tomatoes, & other veggies.
  • Step #26 For condiments, we like light ranch dressing & flavored mayos & mustards.
  • Step #27 BBQ sauce would be great, too! NOTES: In order for coating to adhere properly, chicken mixture must be very cold.
  • Step #28 To make spicier, add cayenne pepper or use a hotter hot sauce or chili sauce.
  • Step #29 Use different seasoning mixs such as poultry seasoning, other kinds of Mrs.
  • Step #30 Dash, or Paul Prodhomme's (love these!).
