Beefy Vegetable Soup Recipe

Ingredients
  • 3 medium potatoes, cubed (about 1 lb) .
  • 1 1/2 c water .
  • 1 3/4 c frozen cut green beans .
  • 2 tbsps reduced sodium soy sauce .
  • 2 tbsps worcestershire sauce .
  • 1/4 tsp dried oregano .
  • 1/8 tsp ground nutmeg .
  • 3 celery ribs, sliced .
  • 1/2 tsp salt .
  • 2 (14 1/2 oz) cans reduced-sodium beef broth .
  • 2 tbsps steak sauce .
  • 2 c fresh corn or frozen corn .
  • 1 tbsp garlic powder .
  • 1 tbsp canola oil .
  • 3 medium carrots, cubed .
  • 1/8 tsp pepper .
  • 1 1/2 lbs lean stewing beef

Directions
  • Step #1 In a large kettle or Dutch oven, brown beef over med-heat/flame in oil.
  • Step #2 Add the broth, water & soy sauce.
  • Step #3 Bring to a boil.
  • Step #4 Reduce heat; cover & let simmer for 1 hr.
  • Step #5 Add the potatoes, Worcestershire sauce, celery, carrots, steak sauce & seasonings.
  • Step #6 Bring to a boil.
  • Step #7 Reduce heat; cover & let simmer for 30-40 mins or until the vegetables are just tender.
  • Step #8 Add corn & beans.
  • Step #9 Bring to a boil.
  • Step #10 Reduce heat; cover & let simmer for 5-10 mins or until vegetables are tender.
