Crab Stuffed Filet Mignon With Whiskey Peppercorn Sauce Recipe

Ingredients
  • 1 tsp minced celery
  • 1 c crimini mushrooms, sliced
  • 1 tsp minced garlic
  • salt & cracked black pepper to taste
  • 4 slices bacon, cooked lightly
  • 1 tsp Dijon mustard
  • 1 tsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 tsp minced onion
  • 2 tbsps bread crumbs
  • 1 clove garlic, minced
  • 1 fluid oz whiskey
  • STEAKS:
  •  
  • 1 tsp minced green bell pepper
  • CRAB STUFFING:
  • 1 tsp minced shallot
  • 1 fluid oz whiskey
  • 4 (6 oz) filet mignon steaks
  •  
  • 2 tbsps shrimp stock or water
  • 1 c heavy cream
  • 1 1/4 c beef broth
  • 1 tsp cracked black pepper
  • 1 tsp minced green onion
  • PEPPERCORN SAUCE
  • 2 tbsps olive oil
  • 1 (6 oz) can crab meat, drained

Directions
  • Step #1 Make Crab Stuffing: Heat 2 tbsps olive oil in a large skillet.
  • Step #2 Saute onion, green onion, garlic, celery, & green pepper until tender.
  • Step #3 Stir in shrimp stock, crab meat, bread crumbs, & Cajun seasoning.
  • Step #4 Remove from heat, & set aside.
  • Step #5 Prepare Peppercorn Sauce: In a small saucepan over med-heat/flame, mix beef broth & cracked black pepper.
  • Step #6 Simmer until reduced to 1 c, stirring frequently.
  • Step #7 Add1 oz whiskey & 1 c cream.
  • Step #8 Continue simmering until reduced to 1 c.
  • Step #9 Remove from heat, & set aside.
  • Step #10 Prepare Steaks: Slice a pocket into the side of each steak, & stuff generously with crab stuffing.
  • Step #11 Wrap bacon around side, & secure with toothpicks.
  • Step #12 Spice up to taste with salt & pepper; set aside.
  • Step #13 Heat olive oil in a large cast iron skillet over med-heat/flame.
  • Step #14 Saute garlic & shallot for 1 min.
  • Step #15 Stir in mushrooms, & saute until tender.
  • Step #16 Remove mushroom mixture, & set aside.
  • Step #17 Place steaks in skillet, & cook to desired doneness.
  • Step #18 Remove from skillet, & keep warm.
  • Step #19 Deglaze skillet with 1 oz whiskey.
  • Step #20 Reduce heat, & stir in the peppercorn sauce & Dijon mustard.
  • Step #21 Add mushroom mixture, & reduce sauce until thickened.
  • Step #22 Remove toothpicks & bacon from steaks, & arrange steaks on a plate.
  • Step #23 Top with sauce.
