Ingredients
  • 3 tbsps sour cream .
  • 1 (1 lb) bag carrots .
  • salt .
  • 3 c vegetable stock

Directions
  • Step #1 Put the stock In a large-ish pot & bring the to a boil.
  • Step #2 Peel, wash & chop the carrots.
  • Step #3 Boil the carrots for about 20 mins until soft.
  • Step #4 Remove pot from heat & use a hand mixer to mix thoroughly.
  • Step #5 Add the sour cream.
  • Step #6 mix again.
  • Step #7 Add salt to taste.
