Mom's Oat Griddle Cakes Recipe

Ingredients
  • 1/3 c butter, melted .
  • 1 c flour .
  • 2 1/2 tsps baking powder .
  • 1 tsp salt .
  • 1 1/2 c quick oats .
  • 2 tbsps sugar .
  • 2 eggs, slightly beaten .
  • 2 c milk

Directions
  • Step #1 Pour the milk over the oats & let this stand 5 mins.
  • Step #2 Stir the flour, baking powder, sugar & salt together.
  • Step #3 Add the beaten eggs to the oat & milk mixture.
  • Step #4 Add the melted butter.
  • Step #5 Mix the dry ingredients into the wet ingredients just until moistened.
  • Step #6 You may keep this in the refrigerator for several days or make as soon as possible.
  • Step #7 Fry on griddle until brown.
  • Step #8 These are thick & take a little longer to cook than regular pancakes.
  • Step #9 Serve warm with your favorite toppings.
