Quick Skillet Rice Gratin Recipe

Ingredients
  • 1 (15 1/2 oz) can kidney beans, rinsed & drained .
  • 2 garlic cloves, minced .
  • 1/3 c parmesan cheese, grated .
  • 2 tbsps olive oil .
  • 2 medium carrots, peeled & sliced .
  • 1 tsp salt .
  • 1 onion, sliced .
  • 2 c instant rice, uncooked .
  • 1 tsp dried thyme

Directions
  • Step #1 Heat oil in large skillet over medium high heat until hot.
  • Step #2 Add onion & garlic; cook & stir 2 mins.
  • Step #3 Add carrots & thyme, cook & stir 4 mins more.
  • Step #4 Add rice, 2 c water, beans & salt; season to taste with black pepper if desired.
  • Step #5 Stir well; bring to a boil.
  • Step #6 Reduce heat to low.
  • Step #7 Sprinkle top with cheese.
  • Step #8 Cover up & let simmer 5 mins or until cheese is melted & all liquid is evaporated.
