Chocolate Angel Pie Recipe

Ingredients
  • 2/3 c sugar .
  • 1/4 tsp cream of tartar .
  • 2 tbsps sugar .
  • 1 c heavy cream .
  • miniature chocolate chips (to garnish) .
  • 4 extra large egg whites, room temperature .
  • 2 tbsps unsweetened cocoa, NOT Dutch-process type

Directions
  • Step #1 Position rack in oven to middle postion.
  • Step #2 Preheat to 300ºF.
  • Step #3 Generously butter a 10-inch pie plate.
  • Step #4 Dust with flour & tap out excess.
  • Step #5 Place the egg whites, cream of tartar & sugar in a bowl.
  • Step #6 Using a mixer on high speed, beat until stiff & glossy but not dry.
  • Step #7 Reduce speed to low & beat in cocoa, mixing only until incorporated.
  • Step #8 Pour & scrape batter into prepared dish.
  • Step #9 Use a rubber spatula to smooth the top, building the rim slightly higher than the center.
  • Step #10 Bake until the batter is light brown & no longer sticky, about 1 hr.
  • Step #11 Transfer to wire rack & cool completely.
  • Step #12 The center will sink as it cools.
  • Step #13 Pour cream into a small bowl.
  • Step #14 Whip till frothy.
  • Step #15 Add sugar & whip until soft peaks form.
  • Step #16 Just before serving, fill center with whipped cream & garnish with chocolate chips.
  • Step #17 * For a pie with a softer texture, put in the fridge for 1 hr after topping with whipped cream.
  • Step #18 *Optional - top this with fresh berries or chocolate shavings in place of chocolate chips if desired.
