Cranberry Scones Recipe

Ingredients
  • 3/4 c butter (no substitutes)
  • SCONES:
  • 1/2 tsp grated orange peel
  • 2/3 c sugar
  • 1/2 c fresh or frozen cranberries
  • 2 1/2 c all-purpose flour
  • 2 tbsps confectioners' sugar
  • 1/2 tsp baking soda
  • 3/4 c buttermilk
  • 2 1/2 tsps baking powder
  • 1 c sliced fresh or frozen cranberries
  • 1 1/2 c butter (no substitutes), softened

Directions
  • Step #1 In a mixing bowl, cream butter.
  • Step #2 Stir in cranberries, confectioners; sugar & orange peel; mix well.
  • Step #3 Cover & put in the fridge for at least 1 hr.
  • Step #4 Meanwhile, mix the dry ingredients in a bowl.
  • Step #5 Cut in butter until mixture resembles coarse crumbs.
  • Step #6 Add cranberries.
  • Step #7 Stir in buttermilk just until moistened.
  • Step #8 Turn onto a lightly floured surface; carefully knead 6-8 times.
  • Step #9 Divide in half.
  • Step #10 Pat each into an 8-in.
  • Step #11 circle.
  • Step #12 Cut into eight wedges.
  • Step #13 Place 1 in.
  • Step #14 apart on ungreased baking sheets.
  • Step #15 Bake at 400F degrees F for 15-18 mins or until lightly browned.
  • Step #16 Remove from pans to wire racks.
  • Step #17 Serve warm with cranberry-orange butter.
