Sourdough Bagels Recipe

Ingredients
  • 1 1/2 oz sugar .
  • 1 1/2 c flour .
  • 1 1/2 c warm water .
  • 2 tbsps sourdough starter .
  • 1 egg white .
  • 1/2 oz salt .
  • 2 c extra flour

Directions
  • Step #1 Mix sourdough starter, warm water, & flour in a bowl.
  • Step #2 Cover up & let sit overnight; the mixture should look bubbly & "spongy" in the morning.
  • Step #3 Add sugar, salt & extra flour.
  • Step #4 Mix well.
  • Step #5 Knead on a floured surface for 10 mins, adding extra flour as needed.
  • Step #6 The dough should be firm.
  • Step #7 Place dough in a greased bowl, cover, & let rise until double (sour dough takes longer to rise than traditional yeast breads).
  • Step #8 After punching down, divide dough into 12 balls.
  • Step #9 Make a hole in the middle of each ball with your thumb, & shape into a bagel shape, with a 2" hole in the middle.
  • Step #10 Meanwhile, bring 2 quarts of water to boil on your stove-top.
  • Step #11 Drop 2 or 3 bagels at a time into the water; boil for 30 seconds, flip bagels over, & boil for an extra 30 seconds.
  • Step #12 Drain with slotted spoon & place on baking sheet.
  • Step #13 Brush tops with egg white & add extra toppings if desired (poppy seeds, dried onions, etc.
  • Step #14 ).
  • Step #15 Bake at 350 for 35 mins, turning once for even browning.
  • Step #16 Bagels are done when they are golden & shiny.
