Charleston Breakfast Casserole Recipe

Ingredients
  • salt & pepper .
  • 1/2 c green onions, sliced .
  • 8 oz mushrooms, sliced .
  • 3 c croutons .
  • 1 bell pepper, sliced (any color) .
  • 6 eggs .
  • 1 tbsp prepared mustard .
  • 12 slices bacon .
  • 1/4 c butter, melted .
  • 2 c grated cheddar cheese .
  • 1 3/4 c milk

Directions
  • Step #1 Place bacon In a large-ish, deep skillet.
  • Step #2 Cook over medium high heat until evenly brown.
  • Step #3 Drain, crumble & set aside.
  • Step #4 Saute the pepper & mushrooms in a bit of the bacon grease until tender.
  • Step #5 Preheat oven to 325F degrees F.
  • Step #6 Melt butter in the microwave, or in a small pan on the stove over low heat/flame.
  • Step #7 Spray a 9x12 inch baking dish with vegetable spray.
  • Step #8 Place croutons in the bottom of the dish, & drizzle with melted butter.
  • Step #9 Beat the eggs in a bowl & add milk, crumbled bacon, salt, onion, mushrooms, & pepper, peppers, & mix until well-mixd.
  • Step #10 Pour over the croutons & cheese & top this with remaining cheese.
  • Step #11 Bake for 40 mins to an hr, until the eggs are done.
  • Step #12 Allow to stand 10 mins before serving.
