Jaffa Choc-chip Cookies - Gluten Free Recipe

Ingredients
  • 120 g gluten-free chocolate chips .
  • 1 egg, lightly beaten .
  • 1/2 c brown sugar, measure lightly packed .
  • 1 c gluten-free cornflour .
  • 1 tbsp orange rind, finely grated .
  • 1 c buckwheat flour .
  • 1/2 tsp cream of tartar .
  • 1/4 tsp bicarbonate of soda .
  • 1/2 c caster sugar .
  • 125 g unsalted butter

Directions
  • Step #1 Preheat oven to 170 degrees centigrade.
  • Step #2 Line biscuit trays with baking paper.
  • Step #3 Cream butter & sugars until light & creamy.
  • Step #4 Gradually add the egg & rind until lightly mixd.
  • Step #5 In a seperate bowl -sift flours, bicarbonate soda & cream of tartar.
  • Step #6 Fold this sifted mixture into the creamed butter mixture.
  • Step #7 Fold in the choc chips.
  • Step #8 Roll tsps of mixture into balls & place on trays.
  • Step #9 There is no need to flatten the biscuits as they will flatten & spread during cooking.
  • Step #10 Do not place the biscuits too close together.
  • Step #11 Bake 10 to 15 mins.
  • Step #12 Stand on trays 5 mins before cooling biscuits on wire racks.
  • Step #13 They will set as they cool.
