Spinach-onion Soup Recipe

Ingredients
  • 3/4 c green onions, sliced .
  • 5 c boiling water .
  • 1/4 tsp salt .
  • 5 chicken bouillon cubes .
  • 1/2 tsp garlic, minced .
  • 1/8 tsp pepper .
  • 1 (10 oz) package frozen sliced spinach .
  • 4 tbsps butter .
  • 1/8 tsp nutmeg

Directions
  • Step #1 In a pot dissolve 1 bouillon cube in 1 c boiling water.
  • Step #2 Add frozen spinach, cook this until done.
  • Step #3 Drain spinach, reserving liquid.
  • Step #4 In a frying pan mix butter, onions & garlic.
  • Step #5 Cook slowly for 10 mins.
  • Step #6 Add spinach.
  • Step #7 Cook, stirring constantly, for 3 mins.
  • Step #8 Add spinach liquid.
  • Step #9 In a bowl dissolve remaining bouillon cubes in remaining boiling water.
  • Step #10 Add mixture to pot.
  • Step #11 Add pepper & salt.
  • Step #12 Bring to a boil.
  • Step #13 Reduce heat.
  • Step #14 Cook for 15 mins longer.
  • Step #15 Garnish with nutmeg.
