Thai Mango Salad Recipe

Step #1 Zest peel from 1 lime & place this in a measuring c along with 1/4 c of lime juice.
Step #2 Whisk in fish sauce, sugar & thai pepper until sugar is dissolved.
Step #3 Gradually whisk in peanut oil until mixed.
Step #4 Add shallot, mix well.
Step #5 Set dressing aside.
Step #6 Peel mangoes, then cut away chunks of fruit from pits then, cut into thin strips (julienne, or use grater) & place this In a large-ish bowl.
Step #7 Seed sweet pepper, cut into very thin strips & add to mangoes.
Step #8 Add carrot, half of green onions, & cilantro.
Step #9 Toss carefully until mixd.
Step #10 Add dressing & a pinch of salt, toss until mixed.
Step #11 Sprinkle top with nuts & remaining green onions.
Step #12 Note: I usually serve this on a bed of lettuce & garnish with a few sprigs of cilantro.
