Thai Mango Salad Recipe

Ingredients
  • 2 tbsps peanut oil .
  • 1 red bell pepper .
  • 1/2 c fresh cilantro (sliced) .
  • 1 tbsp sugar .
  • 1 tbsp fish sauce .
  • 2 limes .
  • 2 green onions (thinly sliced) .
  • 1 red Thai peppers (seeded & minced) .
  • 1 shallot (thinly sliced) .
  • 2 ripe but firm mangoes .
  • 1 medium carrot (coarsely grated) .
  • salt .
  • 1/3 c sliced peanuts (toasted)

Directions
  • Step #1 Zest peel from 1 lime & place this in a measuring c along with 1/4 c of lime juice.
  • Step #2 Whisk in fish sauce, sugar & thai pepper until sugar is dissolved.
  • Step #3 Gradually whisk in peanut oil until mixed.
  • Step #4 Add shallot, mix well.
  • Step #5 Set dressing aside.
  • Step #6 Peel mangoes, then cut away chunks of fruit from pits then, cut into thin strips (julienne, or use grater) & place this In a large-ish bowl.
  • Step #7 Seed sweet pepper, cut into very thin strips & add to mangoes.
  • Step #8 Add carrot, half of green onions, & cilantro.
  • Step #9 Toss carefully until mixd.
  • Step #10 Add dressing & a pinch of salt, toss until mixed.
  • Step #11 Sprinkle top with nuts & remaining green onions.
  • Step #12 Note: I usually serve this on a bed of lettuce & garnish with a few sprigs of cilantro.
