Step #2 Place the dashi, shoyu & mirin in a small saucepan - bring to the boil & cook for 2 mins.
Step #3 Reduce the heat & cook for a further 2 mins.
Step #4 Cool, then chill in the fridge.
Step #5 As noodles do vary it's best to cook them according to the directions on the packet - when cooked, drain then run them under cold water to cool.
Step #6 To assemble the dish:.
Step #7 Place the cold dipping sauce into two small bowls.
Step #8 Place the soba into a bowl & sprinkle with sesame seeds - mix well then divide onto two serving plates.
Step #9 Sprinkle top with the sliced spring onions & Shichimi Togarashi.
Step #10 Garnish each dish with Pickled Ginger, Wasabi & Grated fresh Daikon.
Step #11 To eat:.
Step #12 Hold the dipping sauce bowl in one hand.
Step #13 Using chopsticks, pick up a mouthful of noodles & dip the end into the dipping sauce, then slurp the noodles in with your lips.
Step #14 You can mix in the garnish to suit your taste.
