Cream Of Broccoli Soup Recipe

Ingredients
  • 1 medium onion, sliced .
  • 1 (10 3/4 oz) can cream of celery soup .
  • 1/2 tsp salt .
  • 1 (10 oz) package frozen sliced broccoli .
  • 1/4 c shredded cheddar cheese .
  • 2 c milk .
  • 1/4 c all-purpose flour .
  • 4 c chicken broth .
  • 1/2 tsp pepper .
  • 1/2 c butter or margarine

Directions
  • Step #1 In a large saucepan, mix & bring to boil broth & soup.
  • Step #2 When it is boiling, add broccoli & bring to second boil.
  • Step #3 Reduce heat.
  • Step #4 Cover up & let simmer for about 5 mins, or until broccoli is cooked.
  • Step #5 In medium skillet, heat butter & sautee onions for about 5 mins, or until tender.
  • Step #6 Add the flour & cook for about 1 min longer.
  • Step #7 If necessary, use whisk to remove lumps.
  • Step #8 Slowly stir milk into flour mixture in skillet.
  • Step #9 Cook, until thickened, stirring constantly.
  • Step #10 It will take about 5 mins, then add salt & pepper.
  • Step #11 Mix well.
  • Step #12 Stir milk mixture into broccoli mixture & let simmer over low heat/flame for about 10 mins.
  • Step #13 Stir frequently.
  • Step #14 Ladle into bowls & top this with grated cheese.
