Thai Curry Sausage Cups Recipe

Ingredients
  • 1 tsp brown sugar .
  • 12 spring roll wrappers .
  • fresh coriander leaves, to garnish .
  • 400F ml coconut cream .
  • cooking spray .
  • 2 green onions, thinly sliced .
  • 1 tbsp red curry paste .
  • 1 tbsp oil .
  • 1 red capsicum, finely sliced .
  • 60 g snow peas, thinly sliced .
  • 5 links thick pork sausages

Directions
  • Step #1 Preheat oven to 180°C.
  • Step #2 Grease a 12 hole muffin pan (1/3 c capacity).
  • Step #3 Cut each pastry sheet into four squares.
  • Step #4 Place a square of pastry into a hole in the muffin pan.
  • Step #5 Spray with cooking oil & top this with another square of pastry,at a slight angle.
  • Step #6 Keep layering with cooking oil & two more squares of pastry.
  • Step #7 Line the remaining pan holes the same way using cooking oil & remaining pastry squares.
  • Step #8 Cook for about 15 mins or until golden brown & crisp.
  • Step #9 Heat half the oil in a medium frying pan.
  • Step #10 Add sausages & cook over a medium heat for about 10 mins or until browned all over & cooked through.
  • Step #11 Drain on absorbent paper.
  • Step #12 Stand for 5 mins before cutting into 1/2 cm pieces.
  • Step #13 Heat remaining oil in same cleaned pan.
  • Step #14 Add capsicum & cook, stirring, until soft.
  • Step #15 Add snow peas & curry paste.
  • Step #16 Stir for 1 min.
  • Step #17 Stir in coconut cream, sugar & sausages.
  • Step #18 Simmer over a medium heat & stir in the green onions.
  • Step #19 Spoon the sausage mixture into the pastry c.
  • Step #20 Serve the sausage c as soon as possible, garnished with the fresh coriander leaves.
