Ingredients
1 tsp brown sugar .
12 spring roll wrappers .
fresh coriander leaves, to garnish .
400F ml coconut cream .
cooking spray .
2 green onions, thinly sliced .
1 tbsp red curry paste .
1 tbsp oil .
1 red capsicum, finely sliced .
60 g snow peas, thinly sliced .
5 links thick pork sausages
Directions
Step #1 Preheat oven to 180°C.
Step #2 Grease a 12 hole muffin pan (1/3 c capacity).
Step #3 Cut each pastry sheet into four squares.
Step #4 Place a square of pastry into a hole in the muffin pan.
Step #5 Spray with cooking oil & top this with another square of pastry,at a slight angle.
Step #6 Keep layering with cooking oil & two more squares of pastry.
Step #7 Line the remaining pan holes the same way using cooking oil & remaining pastry squares.
Step #8 Cook for about 15 mins or until golden brown & crisp.
Step #9 Heat half the oil in a medium frying pan.
Step #10 Add sausages & cook over a medium heat for about 10 mins or until browned all over & cooked through.
Step #11 Drain on absorbent paper.
Step #12 Stand for 5 mins before cutting into 1/2 cm pieces.
Step #13 Heat remaining oil in same cleaned pan.
Step #14 Add capsicum & cook, stirring, until soft.
Step #15 Add snow peas & curry paste.
Step #16 Stir for 1 min.
Step #17 Stir in coconut cream, sugar & sausages.
Step #18 Simmer over a medium heat & stir in the green onions.
Step #19 Spoon the sausage mixture into the pastry c.
Step #20 Serve the sausage c as soon as possible, garnished with the fresh coriander leaves.
