Spicy Shrimp And Chorizo Kebabs Recipe

Ingredients
  • 2 tsps salt .
  • 2 large garlic cloves, thickly sliced .
  • 2 lbs large shrimp, shelled & deveined .
  • 2 tsps caraway seeds .
  • 1/4 c extra-virgin olive oil .
  • 8 links chorizo sausage, sliced 1/2-inch thick (1/2 lb.) .
  • 2 tbsps pure chile powder (like ancho)

Directions
  • Step #1 On a cutting board, using the flat side of a chef's knife, mash the garlic & salt to a coarse paste.
  • Step #2 Add the caraway seeds & finely chop them.
  • Step #3 Transfer to a large bowl & stir in the the chile powder & olive oil.
  • Step #4 Add the shrimp & toss to coat.
  • Step #5 Meanwhile, bring a small saucepan of water to a boil.
  • Step #6 Add the chorizo & cook over high heat for 5 mins.
  • Step #7 Drain & pat dry.
  • Step #8 Let cool slightly.
  • Step #9 Tuck a chorizo slice in the crook of a shrimp & thread onto a skewer; the shrimp should be attached at both ends.
  • Step #10 Push it to the end of the skewer & repeat with 2 more shrimp & chorizo.
  • Step #11 Using more skewers, repeat with remaining shrimp & chorizo.
  • Step #12 Grill kebabs over a hot fire, turing once or twice, until charred & the shrimp are cooked through, about 5 mins.
  • Step #13 Do not over cook.
  • Step #14 Serve as soon as possible.
