Onion Omelet Recipe

Ingredients
  • 1 tsp Dijon mustard .
  • 2 tbsps water .
  • 1 tsp dried basil .
  • 2 tbsps romano cheese, grated .
  • 1 tsp olive oil .
  • 1/4 tsp ground black pepper .
  • 1/2 c dry breadcrumbs .
  • 2 tsps margarine .
  • 2 c onions, thinly sliced .
  • 2 c fat free egg substitute

Directions
  • Step #1 Place the onions & oil in a 2-quart casserole.
  • Step #2 Cover up with a lid or vented plastic wrap & mircrowave on high for 4 mins, or until tender.
  • Step #3 Transfer to a large no-stick frying pan.
  • Step #4 Saute over med-heat/flame for 5 mins.
  • Step #5 Stir in the bread crums, romano cheese, basil, mustard & pepper.
  • Step #6 Transfer to a medium bowl & set aside.
  • Step #7 In another medium bowl, whisk together the eggs & water.
  • Step #8 Wipe out the frying pan with paper towels.
  • Step #9 Place it over medium-high heat.
  • Step #10 Add 1 tsp margarine & swirl the pan.
  • Step #11 Add half the eggs.
  • Step #12 Lift & rotate the pan so the eggs are evenly distributed.
  • Step #13 As the eggs set around the edges, lift them to allow uncooked portions to flow underneath.
  • Step #14 When the eggs are mostly set, spread half of the onion mixture over them.
  • Step #15 Use a spatula to fold the omelet in half.
  • Step #16 Transfer to a serving platter.
  • Step #17 Repeat with the remaining margarine, eggs & filling.
