Greek Feta And Tomato Pasta Recipe

Ingredients
  • 1 tsp dried oregano .
  • 1/2 tsp salt .
  • 4 oz feta cheese, crumbled .
  • 1/4 c extra virgin olive oil .
  • 1 small onion, sliced .
  • 1/3 c dry white wine .
  • 3 garlic cloves, sliced .
  • 1/8 tsp cracked black pepper .
  • 4 fresh plum tomatoes, cored & sliced .
  • 1/2 lb thin spaghetti

Directions
  • Step #1 Bring 4 quarts water to a boil & lightly salt.
  • Step #2 Prepare spaghetti following package directions.
  • Step #3 Remove 1/4 c of the cooking water & reserve; drain pasta.
  • Step #4 Meanwhile, heat olive oil in large skillet over med-heat/flame.
  • Step #5 Add onion & cook 3 mins, stirring every once in awhile.
  • Step #6 Add garlic & cook for 1 min, stirring so garlic does not burn.
  • Step #7 Stir in tomatoes, oregano & 1/2 tsp salt.
  • Step #8 Cook for 2 mins.
  • Step #9 Add wine & cook for 1 min.
  • Step #10 Add feta cheese, spaghetti & reserved water & toss with pepper.
  • Step #11 Serve as soon as possible.
