Festive Caribbean Stuffing Recipe

Ingredients
  • 1/2 tsp ground sage .
  • 4 c dried bread, crust included (cut into 1/2 inch cubes) .
  • salt .
  • 2 tbsps olive oil .
  • 1 c calabaza pumpkin, cubed & roasted (or butternut squash) .
  • 1 3/4 c chicken stock .
  • 3 tbsps onions, finely sliced .
  • 3 tbsps unsalted butter .
  • 1 tsp fresh rosemary, minced .
  • 1/2 c raisins (optional) .
  • 1 c broccoli florets (cut up in salted water) .
  • 2 tsps thyme, leaves only .
  • 1 tbsp garlic, minced .
  • 3 tbsps celery, finely sliced .
  • 1/4 c fresh parsley, sliced .
  • black pepper (freshly ground)

Directions
  • Step #1 Bake cubed bread in an oven at 300F degrees F untill crisp & dry.
  • Step #2 Melt the oil & butter in a heavy saucepan.
  • Step #3 Add the garlic & onions & saute until golden brown.
  • Step #4 Add the salt, fresh herbs, spices, black pepper, raisins, bread crumbs, celery, & half the broccoli & half the pumpkin.
  • Step #5 Mix well & add the stock.
  • Step #6 Lower the heat, cover pot & let simmer for about 20 mins.
