Greek Fried Squid In Parsley And Lemon Batter Kalamarakia Recipe

Ingredients
  • olive oil or peanut oil, for frying .
  • 2 lemons, cut into 6 wedges .
  • 1 c all-purpose flour .
  • 2 tbsps coarsely sliced lemon zest .
  • 3 lbs small squid, cleaned & bodies cut into narrow rings, tentacles left whole .
  • 1 c sliced fresh flat-leaf parsley .
  • 1/2 tsp salt .
  • 1/8 tsp cayenne pepper or 1/4 tsp fresh ground white pepper

Directions
  • Step #1 Rinse the cleaned squid & pat very dry.
  • Step #2 Mix the flour, parsley, zest, salt, & cayenne together In a large-ish bowl.
  • Step #3 Add the squid & toss to coat well.
  • Step #4 Pour oil to a depth of 1/2 inch into a large skillet & heat over medium high heat until hot.
  • Step #5 Place as much squid in the pan as will fit in one uncrowded layer & fry until beginning to turn golden, about 30 seconds.
  • Step #6 Turn & fry on the other side until golden all over, about 30 seconds more.
  • Step #7 Transfer to paper towels to drain, & repeat until all the squid are fried, adding more oil & reheating to the smoking point as necessary.
  • Step #8 Mound on a platter or individual plates, garnish with the lemon wedges, & serve right away.
