Tuscan Turkey Sausage Soup Recipe

Ingredients
  • 1/8 tsp caraway seeds .
  • 1/4 tsp salt-free garlic & herb seasoning .
  • 1 (8 oz) can mushroom stems & pieces, drained .
  • 4 c reduced-sodium chicken broth .
  • 1 tbsp italian seasoning .
  • 1/8 tsp fennel seeds, crushed .
  • 1 (15 1/2 oz) can great northern beans, rinced & drained .
  • 12 oz Italian turkey sausage links .
  • 1 small onion, sliced .
  • 1 leek, cut into 1-inch strips (small, white portion only) .
  • 1 (10 3/4 oz) can reduced-fat reduced-sodium condensed cream of chicken soup, undiluted

Directions
  • Step #1 In a nonstick skillet coated with nonstick cooking spray, cook sausage over med-heat/flame until no longer pink; drain.
  • Step #2 Let cool & slice.
  • Step #3 In a large saucepan, onion, mushrooms, whisk together the broth, garlic & herb seasoning, italian seasoning, soup, caraway seeds & fennel seed.
  • Step #4 Add sausage.
  • Step #5 Bring to a boil.
  • Step #6 Reduce heat, uncovered, simmer, for 5 mins.
  • Step #7 Add beans & leek.
  • Step #8 Simmer 10 mins longer or until vegetables are tender.
