Deep-fried Herbed Vegetables In Rice Sheets Recipe

Ingredients
  • For the wraps .
  • 3 1/2 oz water chestnuts, sliced .
  • 3 1/2 oz garlic chives .
  • For the vegetable filling .
  • 1 lb spring rolls, sheets .
  • 1 pinch white pepper .
  • 1 tsp coriander, roots minced .
  • plum sauce (as required for dipping) (optional) .
  • 2 oz cabbage, finely sliced .
  • 1 tsp garlic, minced .
  • 2 1/2 oz small lotus seeds, cooked & coarsely sliced .
  • 6 oz potatoes, boiled & sliced .
  • 1/2 tsp salt .
  • oil (for frying) .
  • 1 tsp sugar

Directions
  • Step #1 Heat 2 tbsps oil in a pan & add the minced coriander roots & garlic.
  • Step #2 Fry well.
  • Step #3 Add the potato, cabbage & water chestnuts.
  • Step #4 Stir until well mixed.
  • Step #5 Spice up with salt, sugar & pepper.
  • Step #6 Add cooked lotus sees & set the filling aside to cool.
  • Step #7 Cut the spring roll sheets into flat circles or as desired.
  • Step #8 Put a little of the prepared filling at the center of each circle an draw the ends together.
  • Step #9 Tie tightly with a garlic chive.
  • Step #10 (Soak the garlic chives in hot/boiling water to soften before using them to tie the packets.
  • Step #11 ) Deep-fry the packets in hot oil until golden & crisp.
  • Step #12 Serve with plum sauce.
