Coconut Flax Bars Recipe

Ingredients
  • 3 tbsps dark corn syrup
  • 1/2 c roasted soy nuts
  • 2 c rolled oats
  • 3 tbsps brown sugar
  • 1/2 c butter
  • 1/2 c shredded coconut
  • 1/2 c flax seed
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking soda
  • 3 tbsps apple juice concentrate, thawed
  • 1/2 tsp ground cinnamon
  • 2 tbsps vital wheat gluten
  • 1/2 c shredded coconut
  • 1 egg
  • 1/2 c whole wheat flour
  • 1/2 c raisins

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Spray a 9 inch square baking pan with cooking spray.
  • Step #3 In a food processor/blender, grind 1/2 c shredded coconut into a fine powder.
  • Step #4 In a large bowl, cream together butter & sugar.
  • Step #5 Mix in egg, apple juice concentrate, corn syrup, & vanilla.
  • Step #6 Mix in coconut powder, gluten, baking soda, whole wheat flour, oats, & cinnamon.
  • Step #7 Stir in remaining 1/2 c shredded coconut, flax seed, raisins, & soy nuts.
  • Step #8 Press evenly into the prepared pan.
  • Step #9 Bake for 20 mins.
  • Step #10 Cool slightly, then cut into bars.
