Step #1 Preheat oven to 350 degrees F (175 degrees C).
Step #2 Spray a 9 inch square baking pan with cooking spray.
Step #3 In a food processor/blender, grind 1/2 c shredded coconut into a fine powder.
Step #4 In a large bowl, cream together butter & sugar.
Step #5 Mix in egg, apple juice concentrate, corn syrup, & vanilla.
Step #6 Mix in coconut powder, gluten, baking soda, whole wheat flour, oats, & cinnamon.
Step #7 Stir in remaining 1/2 c shredded coconut, flax seed, raisins, & soy nuts.
Step #8 Press evenly into the prepared pan.
Step #9 Bake for 20 mins.
Step #10 Cool slightly, then cut into bars.
